Carrot, Pepper, and Shrimp “spaghetti”
- 2 tbs Olive Oil
- 1 green bell pepper
- 1 yellow bell pepper
- 1 red bell pepper
- 1 orange bell pepper
- 1/2 onion
- 1 cup mushrooms
- 1 cup black olives
- 1 bag shrimp
- 4 Peeled and Shredded carrots
Slice peppers, onions, and mushrooms
Place Skillet over medium heat and add oil
Add in peppers, cook for 2 minutes
Add onions, cook another 2 mintues
Add in shredded carrots cook for 1-2 minutes
Add mushroom and olives cook for 1-2 minutes
Add defrosted and detailed shrimp
Mix together and season and cook until everything is tender about another 5 minutes
Remove from heat top with Parmesan cheese
