Cheesy Keto Chicken & Broccoli Casserole

  • 4 c broccoli, cut into bite size pieces

  • 4 c chicken breast

  • 1 can Condensed Cream of Chicken Soup

  • 1 onion, sliced

  • 5 garlic, minced

  • 3 Tbls flour

  • 1 c chicken stock

  • 1/2 c milk

  • 1/2 c cheddar cheese, shredded

  • 1 Tbls Dijon mustard

  • 1/2 Tbls salt

  • 1/4 Tbls black pepper

  • 1/4 c breadcrumbs

  • 3 Tbls butter


Step 1

Heat the oven to 450 degrees F.

Step 2

In a bowl, whisk together cream of chicken soup/stock or vegetable stock and milk, cheese, sour cream and bread crumbs until completely combined.

Step 3

Heat a pan or skillet over medium-high heat. Add olive oil or some butter. Next, add onion and sauté for 3 minutes, stirring continuously. Add garlic and sauté for 5 more minutes, until the onions are golden brown.

Step 4

Sprinkle the flour evenly over the onion mixture and stir until combined. Cook for 1 minute, stirring occasionally. Add in stock stuffing mix, stirring until most of the clumps are gone. Add salt and pepper as per your taste and combined well.

Step 5

Add the chicken and broccoli to an 8×8 baking dish, pouring the soup/milk mixture over the top. Toss until combined.

Step 6

Bake uncovered 5 minutes at 450 degrees. Remove the pan from the oven, sprinkling the remaining cheddar cheese evenly on top of the casserole. Bake for 10 more minutes or until the cheese is nice and melty.

Step 7

Serve hot, garnishing with black pepper or dried herbs.
