Ground Turkey & Spinach Casserole

Ingredients

  • 1 lb ground turkey or pork

  • 1 Tbls olive oil

  • ¼ c chopped onion

  • 1 (10.75 oz) can cream of chicken soup

  • 1 lb frozen leaf spinach, thawed

  • 1 tsp salt

  • Dash of pepper

  • 2 eggs, beaten

  • 1 lb mozzerella cheese, shredded

Preparation

Step 1

Preheat the oven to 350 degrees F. Grease a 10×12 baking dish.


Step 2 Heat oil in a large skillet over medium-high heat. Add the turkey and onion and cook, stirring frequently, until the turkey is cooked.


Step 3 Stir the cream of chicken soup into the skillet and bring to a simmer. Transfer the turkey mixture to the baking dish.


Step 4 Drain as much liquid as possible from the thawed spinach and then place the spinach in a bowl. Add the salt, pepper, and eggs. Mix well.


Step 5

Spread the spinach mixture over the top of the turkey layer in the baking dish. Sprinkle it with the Mozzarella cheese.


Step 6 Place the baking dish in the oven and bake at 350 degrees F for 30-40 minutes or until the center is bubbly and the cheese is melted and browned. Serve hot.
