Jicama and Pineapple Guacamole

  • 3 ea medium ripe avocado peeled & cubed

  • 2-3 Tbsp fresh lime juice

  • ½-1 tsp kosher salt

  • 1/2 c unsweetened pineapple chunks

  • 1/2 c peeled jicama cubed

Step 1

In a bowl, mash avocados until almost smooth.

Step 2

Stir in lime juice and ½ teaspoon salt. Let stand 10 minutes to allow flavors to blend.

Step 3

Adjust seasoning with additional lime juice and salt if desired. Top with pineapple and jicama.
