Mac and Cheese Zucchini Slice

  • 1 1/2 c cooked macaroni

  • 2 zucchini

  • 1 c ricotta

  • 1 c cheddar cheese

  • 1/4 c olive oil

  • 4 eggs

  • 1 c self rising flour

  • 1 tsp salt (bland without it)

  • 1/4 c extra cheddar cheese


Step 1

Preheat oven to 180C. Grease a 20cm x 30cm baking dish, lining it with parchment paper or aluminum foil.

Step 2

Put the cooked pasta, zucchini, ricotta, 1 c cheddar, oil, eggs, 1 c flour and salt into a large mixing bowl. Mix with a spoon until combined.

Step 3

Spoon the mixture into the baking dish and sprinkle the top with the extra cheddar cheese.

Step 4

Bake 40 minutes or until golden and bubbling on top. Allow to cool and then cut into squares.
