BREAKFAST
Apple Oatmeal
- 2 cup water
- 1 cup oats
- 1 Apple
- 1 tsp butter
- 1 Pinch cinnamon
Dice apple in very small pieces place in pot of water to boil
Once water is boiling stir in oats
Cook for 2 minutes, stirring occasionally
Remove from heat and add butter and cinnamon
SNACK
Strawberries
- 1/4 cup Strawberries
Rinse strawberries thoroughly and enjoy!
LUNCH
Meatloaf Minis
- 1 lb Ground Turkey
- 1 Egg
- 1/2 Green Pepper
- 1/2 Onion
- 1/2 cup Oats
- Sprinkle Salt and Pepper
Preheat Oven to 350 degrees
Spry 12 cup muffin tin with cooking spray
Mix all ingredients in large bowl
Divide mixture into 12 cup muffin tiun
Bake 20-25 minutes
Remove from oven and cool 5-10 minutes before removing from tin
Cauliflower Mash
- 1 head Cauliflower
- 2 tbs Butter
- 1 tbs Garlic Powder
Boil Large pot of water
Cut head of cauliflower into florets
Add caluliflower in boiling water and cook for about 10 minutes or until tender.
Drain and add garlic powder, salt, and pepper.
Use food processor or blender to mix or use potato masher.
SNACK
Celery with Peanut Butter
- 2 stalk Celery
- 2 tbsp Peanut Butter
Slice celery stalk into pereferred sizes
Use celery stalk to dip into peanut butter and enjoy!
DINNER
Rotisserie Chicken
- 1 rotisserie chicken
Pick up whole rotiserie chicken at the store (my favorite is Costco)
Remove chicken from bones and shred
Put shreeded chicken in bowl and place in fridge
Stir Fry Veggies
- 1/2 tsp Olive Oil
- 1/2 cup Green Beans
- 1/2 cup Sliced fresh carrots
- 1/2 cup Sliced bell pepper
- 1/2 cup Small broccoli florets
- 1/2 tsp Garlic Powder
- 2 tbs Vegetable Broth
Heat oil in skillet over medium heat
Add vegetables and broth.
Cook for 5-7 minutes or until tender stirring occasionally. Season to taste
