Egg Salad and Sweet Potato Toast
- 4 whole Eggs (boiled)
- 1 whole Avocado (mashed)
- 1 cup veggies (of your choice)
- 1 whole Sweet Potato
Preheat oven to 400 degrees.
Boil eggs
Peel and chop boiled eggs.
Mash avocado.
Chop veggies.
Place eggs, avocado and veggies in large bowl and mix.
Drizzle lightly with olive oil and place bowl to the side.
Season with salt and pepper.
Slice sweet potato thin.
Spread out potato slices onto a baking sheet.
Season with salt and pepper.
Bake potato slices for 15-20 minutes.
Take potato slices out and flip each slice over and return to oven.
Bake for an additional 15-20 minutes. Or until a fork can easily pierce the potato. Avoid over cooking.
Place sweet potato on place. Spread 2 tbsp of egg/avocado/veggie mix onto sweet potato slice.
