Vegetable Stir Fry with Chicken or Tofu
- 1 cup brown rice, uncooked
- 1 tbs Vegetable Oil
- 1 lb Chicken or extra firm tofu, cut into cubes
- 3 cups Vegetables, cut into bite size pieces (any combination of broccoli, bell pepper, mushrooms, and/or onions
- 1/4 cup peanuts, chopped (optional)
- 1/2 cup penut sauce
Peanut Sauce
- 2 tbs Creamy Peanut Butter
- 1 1/2 tbs Low Sodium Soy Sauce
- 1 tbs Brown Sugar
- 1 tbs Lime Juice
- 1 tbs Garlic, minced, or powder
- 1/4 cup Water
Cook and Prepare rice accourding to the package directions
Prepare the peanut sauce: Place peanut butter, soy sauce, brown sugar, lime juice, garlic, and water in a microwave safe bowl. Microwave 30-60 seconds and then whisk until combined.
in a large skillet, heat oil at medium heat.
Add chicken or tofue and saute' until golden brown (approximately 6-8 minutes for chicken, 10-12 minutes for tofu).
Add vegetables to pan and saute an additional 3-4 minutes.
Add peanut sauce, stir and cook another 3-4 minutes. Serve over prepared rice and top with chopped peanuts, if desired
