Vegetable Stir Fry with Chicken or Tofu

Vegetable Stir Fry with Chicken or Tofu

  • 1 cup brown rice, uncooked
  • 1 tbs Vegetable Oil
  • 1 lb Chicken or extra firm tofu, cut into cubes
  • 3 cups Vegetables, cut into bite size pieces (any combination of broccoli, bell pepper, mushrooms, and/or onions
  • 1/4 cup peanuts, chopped (optional)
  • 1/2 cup penut sauce

Peanut Sauce

  • 2 tbs Creamy Peanut Butter
  • 1 1/2 tbs Low Sodium Soy Sauce
  • 1 tbs Brown Sugar
  • 1 tbs Lime Juice
  • 1 tbs Garlic, minced, or powder
  • 1/4 cup Water
  1. Cook and Prepare rice accourding to the package directions

  2. Prepare the peanut sauce: Place peanut butter, soy sauce, brown sugar, lime juice, garlic, and water in a microwave safe bowl. Microwave 30-60 seconds and then whisk until combined.

  3. in a large skillet, heat oil at medium heat.

  4. Add chicken or tofue and saute' until golden brown (approximately 6-8 minutes for chicken, 10-12 minutes for tofu).

  5. Add vegetables to pan and saute an additional 3-4 minutes.

  6. Add peanut sauce, stir and cook another 3-4 minutes. Serve over prepared rice and top with chopped peanuts, if desired
