Grilled Skirt Steak with Blistered Tomatoes and Guacamole

  • 1 1/2 lb Skirt Steak
  • 2 tsp Cumin
  • 1 tsp Coriander
  • 2 Cloves Garlic, minced
  • 4 tbs Lime Juice
  • 3 tbsp Olive Oil, divided
  • 3 Avocadoes, diced
  • 2 tbs Finely chopped Red Onion
  • 2 tbs Cilantro, chopped finely ( plus cilantro leaves for serving)
  • 1/2 tsp Crushed Red Pepper, flakes
  • 3/4 cup Red grape tomatoes, halved
  • 3/4 cup Yellow grape tomatoes, halved
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  1. Place steak in a shallow glass baking dish,

  2. In a smaill bowl, whisk together cumin, coriander, garlic, 2 tbs lime juice, and 2 tbs of olive oil.

  3. Pour mixture over steak, turning to coat, and marinate for about 10-15 minutes.

  4. Make guacamole: In a medium bowl, mash together avocado, onion, cilantr, red pepper flakes, and remaining lime juice and season.

  5. In a medium bowl, mix tomatoes wiht remining 1 tbs of olive oil and season with salt and pepper.

  6. Heat a gril pan over medium hight heat. Gril tomatoes until blistered about 4 minutes. then remove tomatoes and increase heat to high.

  7. Add steak to grill and season wiht salt and pepper. Gril 3 minutes per side for medium-rare. You can cook longer for desired color. Let sit for 3 minutes.

  8. Thinkly slice steak against the grain. Top wiht blistered tomatoes and cilantro and serve with guacamole.
