Sweet Potato Muffins
Sweet Potato pie meets mufin, meets upgraded ingredients, you can even add raisins or organic chocolate chips to the batter.

- 1 cup mashed cooked sweet potato
- 1 apple, cored and shredded
- 1/2 cup maple syrup
- 2 large eggs
- 2 tbs butter, melted
- 1 tsp vanilla extract
- 1 cup flour 9low carb and/or gluten-free if desired)
- 1 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp sea salt
Preheat the oven to 375.
Line the cups of a 12 cup muffin pan with liners.
In a large bowl, combine the sweet potato, apple, maple syrup, eggs, melted butter, and vanilla.
In a seperate bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt. Fold the dry ingredients into the wet ingredients.
Spoon the batter into the lined cups, filling each two-thirds full. Bake for 15 minutes or until desired doneness.
