Mac and Cheese Zucchini Slice
If you love mac and cheese and you love zucchini slice, this recipe mashup will be your idea of heaven in a baking tray.
- 1 1/2 c cooked macaroni
- 2 ea zucchini
- 1 c ricotta
- 1 c cheddar cheese
- 1/4 c oilive oil
- 4 ea eggs
- 1 c self rising flour
- 1 tsp salt ((bland without it))
- 1/4 c extra cheddar cheese
Preheat oven to 180C. Grease a 20cm x 30cm baking dish and line it with baking paper.
Put the cooked pasta, zucchini, ricotta, 1 cup of cheddar, oil, eggs, 1 cup self-raising flour and salt into a large mixing bowl and mix with a spoon until combined.
Spoon the mixture into the baking dish and sprinkle the top with the extra cheddar cheese.
Bake in the oven for 40 minutes or until golden and bubbling on top.
Allow to cool and then cut into squares.
You can throw extra vegies into this yummy slice, whatever you can grate, chuck it in.
You can also use parmesan on the top for extra crunch.
Don’t scrimp on the salt in this recipe as it can be bland without it.
