Ingredients: 1 Tbsp extra-virgin olive oil; 1 ea red bell pepper (thinly sliced); 3 ea garlic cloves (minced); 2 tsp chili powder; 3 Tbsp red curry paste; 1 ea lime (halved); 1 1/2 c frozen peas; 4 ea scallions (thinly sliced); 1 ea red onion (thinly sliced); 1 Tbsp fresh ginger (minced); 1 ea small head cauliflower (cut into bite size florets); 1 tsp ground coriander; 1 14 oz can coconut milk; 1 28 oz can chickpeas; 1/4 c fresh cilantro; salt & pepper to taste; steamed rice, for serving (optional)
