Garlic Brussels Sprouts

If there were a mascot for disliked vegetabels, it would be the Brussels sprout. The problem is, this underappreciated vegetable is usually prepared in ways the dont complement its personality. Protein 4g, Carbs 11g, Fat 8g, Calories 116

  • 1 lb Brussels Sprouts, trimmed and halved or quartered if large
  • 1/2 small Lemon
  • 2 tbs Extra Virgin Olive Oil
  • 1 tbs garlic powder, or 2 cloves garlic sliced
  • 1/2 tsp dried thyme
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tbs finely shredded Parmesan cheese
  1. Position two rackes in the upper and lower third of oven and preheat oven to 425

  2. Toss together the Brussels sprouts, lemon slices, olive oil, garlic, thyme, salt, and pepper in a large bowl.

  3. Divide between two large rimmed baking sheets and spread in an even layer.

  4. Roast on the two racks without stirring for 10 minutes.

  5. Switch the pans tops to bottom and continue roasting, without stirring, until the sprouts are lightly browned and tender, 8-10 minutes longer.

  6. Transfer to a serving dish and sprinkle with the Parmesan.
