BREAKFAST
Veggie Egg Cups
- 6 whole Eggs
- 6 ounces Baby Spinach (chopped)
- 1/2 whole Bell Pepper (finely sliced)
- 1/4 whole Onion (finely sliced)
Pre Heat Oven to 375 degrees.
Lightly spray muffin tray with non stick cooking spray.
Blend 6 eggs in large bowl.
Add chopped baby spinach, sliced bell pepper and onion.
Season with salt and pepper.
Evenly pour egg mixture into muffin cups.

Bake for 15-20 minutes or until toothpick comes out dry.
SNACK
Blueberries
- 1/4 cup Blueberries
Rinse blueberries thoroughly and enjoy!
LUNCH
BYO Salad
This is a build your own salad- you put wht you want it in, this is just what I like in mine.
- 1 head Romaine Lettuce
- 4 handfulls Spinach
- 2 Tomatos
- 2 Peeled carrots
- 1/2 Cucumber
- 1/4 Green Pepper
- 4 Sliced Mushrooms
- 1/4 cup Broccoli
- 1 stalk Celery
- 1 tbs Shredded, cubed, or crumbled cheese of your choice (Optional)
- 1 tbs Crutons (Optional)
- 1-2 tbs Skinney Girl Salad Dressing (Raspberry Vinaigrette)
SNACK
Cucumber and Avocado
- 1/2 whole Cucumber
- 1/2 whole Avocado
Rinse and slice cucumber into preferred sizes.
Spoon out inside of avocado into a bowl.
Smash avocado with spoon.
Add splash of water to avocado for texture.
Season with salt and pepper.
Spread avocado onto cucumber slices.
Enjoy!
DINNER
Meatloaf Minis
- 1 lb Ground Turkey
- 1 Egg
- 1/2 Green Pepper
- 1/2 Onion
- 1/2 cup Oats
- Sprinkle Salt and Pepper
Preheat Oven to 350 degrees
Spry 12 cup muffin tin with cooking spray
Mix all ingredients in large bowl
Divide mixture into 12 cup muffin tiun
Bake 20-25 minutes
Remove from oven and cool 5-10 minutes before removing from tin
Cauliflower Mash
- 1 head Cauliflower
- 2 tbs Butter
- 1 tbs Garlic Powder
Boil Large pot of water
Cut head of cauliflower into florets
Add caluliflower in boiling water and cook for about 10 minutes or until tender.
Drain and add garlic powder, salt, and pepper.
Use food processor or blender to mix or use potato masher.
