Ingredients: 1 lb pasta (like penne or rigatoni); 1 ea sweet onion (thinly sliced); 2 ea summer squash (thinly sliced); salt & pepper; 1 c ricotta cheese; 2 Tbsp olive oil; 3 ea garlic cloves (minced); 1 1/2 c halved yellow cherry tomatoes; 1/3 c finely grated Pecorino Romano cheese ((can subsitute with parmesan cheese but won't be as salty or tangy)); 1/4 c fresh basil (chopped)
