Spinach Strawberry Salad
This simple spinach strawberry salad is a wonderful starter and an ideal accompaniment to grilled or roast chicken or pork.
This recipe will allow you to use those fresh herbs you've been growing too.
Easy Herb Vinaigrette
- 9 Tbsp white wine vinegar
- 1 ½ Tbsp honey
- 1/2 tsp fine sea salt
- 1 c canola oil
- 3 Tbsp chopped basil
- 3 Tbsp fresh chives (minced)
Salad
- 1 ½ c quartered strawberries
- 1/4 c Easy Herb Vinaigrette (see recipe)
- 1 Tbsp finely chopped fresh mint
- 1 6 oz package of fresh baby spinach
- 2 Tbsp sliced almonds (toasted)
- 1/4 tsp freshly ground pepper
Easy Herb Vinaigrette
Combine the first 3 ingredients in a medium bowl; slowly whisk in oil until combined. Stir in basil and chives.
Salad
Combine strawberries, ¼ cup vinaigrette, mint, and spinach in a large bowl; toss gently to coat.
Sprinkle with almonds and pepper; serve immediately.
Store remaining vinaigrette, covered, in refrigerator for up to 5 days.
