Veggie Egg Cups

Veggie Egg Cups

  • 6 whole Eggs
  • 6 ounces Baby Spinach (chopped)
  • 1/2 whole Bell Pepper (finely sliced)
  • 1/4 whole Onion (finely sliced)
  1. Pre Heat Oven to 375 degrees.

  2. Lightly spray muffin tray with non stick cooking spray.

  3. Blend 6 eggs in large bowl.

  4. Add chopped baby spinach, sliced bell pepper and onion.

  5. Season with salt and pepper.

  6. Evenly pour egg mixture into muffin cups.



  7. Bake for 15-20 minutes or until toothpick comes out dry.
