Healthy Breakfast Casserole

  • 1 lb turkey or chicken sausage

  • 1 tsp extra virgin olive oil

  • 1 Red bell pepper, diced

  • 1 bunch green onions, finely chopped (3/4 c)

  • 5 oz baby spinach, chopped or torn (5 c)

  • 10 large eggs

  • 1/2 c milk

  • 1-2 tsp favorite hot sauce

  • 1/2 tsp kosher salt

  • 1/4 tsp black pepper

  • 16 oz hash browns, frozen & diced

  • 1 c sharp cheddar cheese, shredded


Step 1

Preheat oven to 375 degrees. Generously coat a 9x13-inch baking dish with nonstick spray.

Step 2

Heat a large, nonstick skillet over medium-high heat. Break the sausage up in the skillet into small pieces and brown it until fully cooked through. With a slotted spoon, remove to a large mixing bowl. No need to wipe the skillet clean.

Step 3

Drizzle in the olive oil. Add the bell pepper and 3/4 of the green onions. Stire and cook until the pepper is crisp-tender, about 8 minutes.

Step 4

Add the spinach a few handfuls at a time, stirring until the spinach wilts. It will cook down considerably. This will take about 2 minutes. Add the vegetables to the mixing bowl with the sausage. Add the hash browns and 1/2 c of cheese to the mixing bowl. Gently stir to combine.

Step 5

In a separate mixing bowl, whisk together the eggs, milk, hot sauce, salt and pepper until blended. Pour the egg mixture over the hash browns, stirring to gently combine. Pour into the baking dish. Top evenly with the remaining 1/2 c cheese. Cover the casserole with aluminum foil and bake 30 minutes.

Step 6

Remove the foil and continue baking until the eggs are set and potatoes tender, about 15 to 20 minutes. Sprinkle with remaining green onions. Let set a few minutes then serve!


To make ahead, fully assemble 1 day in advance, and store covered in the refrigerator. Let the casserole come to room temperature while preheating the oven.
