Spinach Strawberry Salad

Ingredients

Easy Herb Vinaigrette

  • 9 Tbls white wine vinegar

  • 1 ½ Tbls honey

  • 1/2 tsp fine sea salt

  • 1 c canola oil

  • 3 Tbls chopped basil

  • 3 Tbls fresh chives minced


Salad

  • 1 ½ c quartered strawberries

  • 1/4 c Easy Herb Vinaigrette (recipe above)

  • 1 Tbls finely chopped fresh mint

  • 1 6 oz package of fresh baby spinach

  • 2 Tbls sliced almonds toasted

  • 1/4 tsp freshly ground pepper


Preparation

Step 1 Combine the first 3 ingredients for the dressing in a medium bowl. Slowly whisk in oil until combined. Stir in basil and chives.


Step 2

Combine strawberries, ¼ cup vinaigrette, mint, and spinach in a large bowl. Toss gently to coat then sprinkle salad with almonds and pepper.


Step 3

Serve immediately.

NOTES Store remaining vinaigrette, covered, in refrigerator for up to 5 days.
