Ingredients
Easy Herb Vinaigrette
9 Tbls white wine vinegar
1 ½ Tbls honey
1/2 tsp fine sea salt
1 c canola oil
3 Tbls chopped basil
3 Tbls fresh chives minced
Salad
1 ½ c quartered strawberries
1/4 c Easy Herb Vinaigrette (recipe above)
1 Tbls finely chopped fresh mint
1 6 oz package of fresh baby spinach
2 Tbls sliced almonds toasted
1/4 tsp freshly ground pepper
Preparation
Step 1 Combine the first 3 ingredients for the dressing in a medium bowl. Slowly whisk in oil until combined. Stir in basil and chives.
Step 2
Combine strawberries, ¼ cup vinaigrette, mint, and spinach in a large bowl. Toss gently to coat then sprinkle salad with almonds and pepper.
Step 3
Serve immediately.
NOTES Store remaining vinaigrette, covered, in refrigerator for up to 5 days.
